This time is my favorite time of year. I love to cook and the holidays gives me even more reason to bake some of my favorite sweets and treats. I have made some cookies and I have also made candy but another thing I love to make is cookie bars, especially ones with coconuts and almonds!
If you love chocolate chip cookies, chocolate, coconut and almonds you are going to LOVE these bars. These cookie bars are sweet, really rich in flavor and the perfect treat for spoiling the family or friends for the holidays. Three layers of deliciousness!
Want to make these yummy bars? These are something that will take a few hours to be ready but so worth the wait!
Chocolate Chip Coconut Bon Bon Bars
In a mixing bowl add the Betty Crocker Chocolate Chip Cookie Mix, coconut oil, water and egg. Mix until dough forms. Press dough into a 13×9-inch pan and bake at 350° for about 11-12 minutes or until golden. Remove from oven and allow to cool completely.
In mixing bowl add 1 stick of softened butter, milk and half of the confectioners sugar. Mix on medium a 2 minutes and then add remaining confectioners sugar gradually until well blended. Add coconut and almonds and mix another 30 seconds to 1 minute to incorporate into the mixture.
Spread the mixture over the cooled cookie layer. Cover and refrigerate 1-2 hours to allow filling to set. Once cooled you will want to make the top chocolate layer.
In a large nonstick saucepan add chocolate chips, 1 stick of softened butter and whipping cream. Heat the ingredients over medium-low heat until all the chocolate is melted and texture is smooth. Remove from heat and allow to cool until mixture is warm.
Pour the chocolate mixture over the coconut filling and spread to cover. Cover and refrigerate 1-2 hours or until bars are set. Cut into squares and enjoy!

I absolutely DO love all of the ingredients in these bars! I have been looking for something a little different that would be good to make and send with my husband when it’s his turn to bring the birthday “cake” to his work. These would be perfect for that and family dinners!
