One thing I enjoy making is comfort food. I remember growing up I loved when my mom made tuna noodle casserole. It is good and easy to prepare.
First drain two cans of Albacore tuna and flake it into a 9×13 baking dish.
In a medium bowl add a can of Cream of Broccoli, a can of Broccoli cheese and some crushed potato chips.
Add cooked pasta on top of tuna in dish. Then pour mixture on top of noodles.
Use a fork to stir mixture evenly. Then add some shredded cheese and a layer of crushed potato chips.
Cover with foil and bake at 350° for about 25-30 minutes until the cheese on top is melted and golden.
What makes me happy is that my kids claim they don’t like seafood but will eat tuna sandwiches and tuna noodle casserole. On school nights when I am preparing dinner for the whole family, these big budget friendly meals come in real handy!

Tuna Noodle Casserole Recipe
Ingredients
- 2 5 oz cans of Albacore tuna drained
- 8 oz Bowtie pasta
- 1 can Campbell's Broccoli Cheese
- 1 can Campbell's Cream of Brocolli
- 1 cup crushed potato chips
- 1 cup milk
- 1/2 cup shredded cheese
Instructions

Cook pasta according to package. Drain and set aside.

Flake tuna into a 9"x13" or similar size casserole dish.

In a bowl add the can of Broccoli and Cheese, can of Cream of Broccolli and 3/4 cup of the crushed potato chips. Stir and mix well.

Add cooked pasta on top of tuna, then pour mixture over noodles. Use a fork to mix noodles, tuna and mixture. Sprinkle shredded cheese on top.Next add remaining crushed potato chips to top of casserole.

Cover with foil and bake on 350° for 25-30 minutes until cheese is melted on top and golden.

Making your own cream sauce is not at all difficult, and low sodium saltines can be used instead of potato chips.
