One kind of casserole that I can’t go wrong making at my house is Cowboy Casserole. Bring on the tater tots and don’t forget the cheese! My cowboy casserole recipe is something that all of my family just LOVES and usually there is no leftovers.
The recipe I had found originally called for Cream of Mushroom soup. I am the only one in my family who will eat mushrooms so I used Cream Of Broccoli instead which is just as good. Below is the recipe for this yummy Cowboy Casserole that my whole family LOVES…
Cowboy Casserole Recipe
Ingredients
- 1 pound lean ground beef
- 1 bag of tater tots 30oz - defrosted
- 1 medium onion chopped
- 1 can cream of broccoli
- 1 can corn drained
- 2 cups shredded cheese
- 1/2 cup milk
- 4 tablespoons sour cream
- 1 tsp vegetable oil
- 1 tsp garlic salt
Instructions

In a skillet add onion and vegetable oil. Cook for a couple minutes until the onions are soft and tender.

Add ground beef to skillet and garlic salt. Cook over medium heat until meat is no longer pink. Drain excess fat and set aside.

In a bowl add the cream of broccoli, milk and sour cream, corn and half of the shredded cheese. Add mixture to beef mixture and stir to blend mixtures.

In a 9x13 casserole dish add a layer of tater tots on the bottom. Pour mixture over tater tots then add remaining tater tots to the top. Sprinkle with remaining cheese.

Bake at 350° for 25 to 30 minutes or until cheese is melted on top and tater tots are golden and crispy.

Made this for dinner tonight. It was pretty good however I found out a few things. One, the filling is delicious and I didn’t make any adjustments. Two, a single 32 oz bag of tater tots was not enough for a 9×13 pan so I didn’t have enough for top and bottom. I had a little bit of potatoes o’brien Left and used that to finish off the topping. The third thing I found out was that I liked the potatoes o’brien Better than the tater tots, but I’ve never been that big a fan of frozen tater tots ( they have that freezer taste to them ). Lastly I felt a top and bottom layer was too much potato and essentially drowned out the delicious center filling. Next time I will either just use potatoes o’brien For a top layer or I may even try a mashed potato topping and finalize it with the cheese. Overall a flavorful recipe and will definitely make again with alterations.
