For the last couple years I have been really trying to encourage my family to try eating more of a variety of vegetables. I love almost all veggies but my family can be picky and request that I make green beans instead of something they have never heard of. When I heard about the Farm Fresh To You service I was excited to give it a try. When I received a box of full of fresh organic fruits and vegetables on my doorstop I couldn’t wait to bring the box inside, open it up and look at all my fresh fruits and veggies.
In the box I found white Avalanche potatoes, Corn, honeydew melon, cucumber, celery, peaches, purple bell peppers, plums, Heirloom tomatoes, Shishito peppers, red grapes and some Rainbow chard! The recipe ideas started immediately flowing through my mind. I started thinking what was I going to do with the veggies that I received.
The vegetables in the box come from Capay Organic, a family-owned organic farm that has a determination to bring the BEST tasting produce to their customers. The Farm To Fresh To You service from Capay Organic started with just a handful of customers that was delivered weekly by the grandparents in the family station wagon to now providing a delivery service to the Bay Area and Sacramento. I was happy when I found out that they delivered to my zip code.
When I seen the purple bell peppers in my shipment I was really excited. Bell peppers are one of my favorite vegetables to cook with. I use them in my pasta salads, I stuff them and make them a meal and I also use them with my meats in my slow cooker to give my meats a delicious flavor. I can’t wait to use my pretty purple bell peppers in a pasta salad.
The next thing that really had my interest was the Rainbow Chard. I have never bought chard so I couldn’t wait to make a recipe and sneak it in.
I enjoy quiche so I decided to use some of the Rainbow Chard and make a Bacon and Chard Quiche that was delicious!

Bacon and Chard Quiche Recipe
Ingredients
- 5 eggs
- 1/2 cup Rainbow Chard
- 3/4 cup milk
- 1/4 tsp pepper
- 1/2 tsp salt
- 1 cup shredded cheddar cheese
- 1/2 cup finely shredded mozzarella cheese
- 4 pieces of bacon cooked
- 1 pie crust uncooked
Instructions

Crumble bacon and place on the bottom of the pie crust.

In a mixing bowl beat the eggs and milk until they are light and fluffy. Add salt, pepper and cheeses.

Pour mixture into pie crust over bacon.

Bake for 40-45 minutes on 350° until quiche is set and not wiggly.

Cool for 3 to 5 minutes, serve and enjoy!
