December is one of my favorite months to bake sweet treats. Not only do I make lots of goodies for the family but I am known to give them as gifts too. It wouldn’t be Christmas without making plates full of cookies and other goodies to give along with gifts as this is the season of giving!
One thing that can be a bummer is when you make a delicious treat that gives one or more of your family members an upset stomach. Unfortunately my husband and one of my daughters have sensitive stomachs when it comes to dairy so there are some recipes I do avoid making that include large amounts of milk because I don’t want to see any frowns. I was excited to find out about The a2 Milk Company™ that has the only fluid milk on the US market that is guaranteed A1 protein-free.
This past week I headed out to Sprouts to purchase some of the a2 Milk ® because I was determined to make some homemade whoopie pies! This was only my second time to this store so it was fun looking at all the different products in the store and the dairy options I haven’t seen before.
Once I was home I whipped up some whoopie pies with the a2 Milk ® that I purchased that are really easy to make. You can also get a little creative and add extras in your pies to give them even more flavor.
To make the Whoopie Pies you make the little chocolate cakes first. To make the cake mix you will need shortening, sugar, eggs, milk, vanilla, flour, baking soda and salt. (See full recipe below)
Once you have your cake mix ready you drop them on a baking sheet in little mounds. You will want to try to make them all the same size so that they match up together when adding the frosting.
While your little cakes are baking in the oven you will want to make your filling. You will need shortening, confectioners sugar, marshmallow topping, milk, vanilla extract and salt. Once your little cakes are ready and have cooled you can start making your whoppie pies.
I mentioned before that I like to add extras. I personally love adding little pieces of peppermint bark in my whoopie pie filling. This isn’t required but boy is it delicious!
I think these whoopie pies are good with just the plain filling but you can really get creative and make your own whoopie pie creations.

Whoopie Pies Recipe #MadeWithA2Milk
Ingredients
- For Cakes
- 4 cups flour
- 2 cups a2 Milk®
- 2/3 cup unsweetened cocoa
- 3/4 cup shortening
- 2 cups sugar
- 2 eggs
- 2 tsp vanilla
- 2 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- For Filling
- 3 cups confectioners sugar
- 1 1/3 cup marshmallow topping
- 1 teaspoon vanilla extract
- 1/3 cup a2 Milk® or LESS
Instructions

In a mixing bowl cream 3/4 cup shortening and 2 cups sugar.

In another bowl add eggs and with a fork slightly beat the eggs. Add milk, vanilla and stir for about 5 seconds. Add mixture to shortening/sugar mixture and mix for another 5 seconds.

Add 2/3 cup cocoa, 2 1/2 teaspoons of baking soda and salt to mixture and mix on low to medium speed for 2 minutes.

Using a tablespoon drop mixture into small mounds on a non-stick cookie sheet. Bake at 350° for 10-13 minutes. The little cakes are ready when you it springs back when you press your finger in the center. Once they are done remove from oven and cool on wrack.

Next you will make the filling. In a mixing bowl combine 3 cups confectioners sugar, 1 1/3 cup marshmallow topping, 1 teaspoon vanilla extract and just enough of the a2 Milk® to give the filling a creamy and fluffy texture.

Spread filling on your baked little cakes and top with another cake to make Whoopie Pies.
Everyone enjoyed my Whoopie Pies and I didn’t receive any complaints. I am now anxious to try the 2 Milk® in some of my other recipes that call for milk. I think I may be tempted to make some homemade peanut butter milkshakes next!
