One thing that I eat regularly for breakfast is eggs. While they are good alone, I like to get creative like when I make my Egg & Avocado Breakfast Rolls.
When it comes to shopping for eggs, I have been buying the Eggland’s Best eggs for the last few years. Compared to ordinary eggs, each of the Eggland’s Best eggs has FOUR times more vitamin D, more than DOUBLE the omega-3s and 25% less saturated fat.
With just a few ingredients you can make yourself a healthy breakfast that includes AVOCADO which is something I love adding into my meals when I can. I am from California and we have some of the BEST avocados here! Find my Egg & Avocado Breakfast Rolls below.
Egg & Avocado Breakfast Rolls
Serving Size For Two
Ingredients:
- 3 Egglands Best eggs
- 1 avocado (diced)
- 2 flour tortillas
- 2 pieces of bacon (cooked & crumbled)
- 1/4 cup red bell peppers (diced)
- 1 teaspoon olive oil
- 1 avocado (diced)
Directions:
- In a skillet add olive oil and bell pepper. Cook over medium heat for 2-3 minutes until bell peppers are tender. Add eggs and cook an additional 2-3 minutes stirring frequently.
- Lay tortilla flat on a plate. Add eggs, bacon and avocado to center of tortilla. Roll tortilla and then cut into slices creating your rolls.
- Enjoy these alone or dip in sour cream, add some hot sauce or one of your favorite condiments!
