Vacation has officially ended, the kids are back in school and now the evenings here at my house are BUSY with after school activities, plenty of homework and just enough time to get chores done before the day is over. Since it has been in TRIPLE digit temperatures here in California this summer I have been using my pressure cooker to make many of our family meals. What I like about the Smithfield Roasted Garlic & Herb Pork Loin Filet is, it is so versatile. I can grill it if I want to cook outdoors, I can roast it in the oven, I can sauté it, or I can add it in my pressure cooker and prep the rest of the meal while it is cooking. If you have a slow cooker you can use that too!
I really like that the pork is already marinated making it easy to get real flavor, real fast when you don’t have hours to prepare a meal. My family loves a meal with FLAVOR! For this recipe I chose to slice the Smithfield Roasted Garlic & Herb Pork Loin Filet but you can also choose to use a couple forks to shred the pork to make shredded pork sliders instead.
I am always looking for new ways to add fruit and vegetables to my meals. I created a simple pineapple salsa with pineapple bits, red onion, cilantro and lime that I added to the sliders to give them even more flavor and a way to add fruits and vegetables to our meal.

Pork Sliders With Pineapple Salsa
Ingredients
- 1 Smithfield Roasted Garlic & Herb Pork Loin Filet
- Slider rolls
- Lettuce leaf
- 1 cup pineapple bits drained
- 1/2 cup red onion chopped
- 3/4 cup cilantro chopped
- 2 limes
Instructions

Add the pork loin filet to pressure cooker and cook for 20-30 minutes depending on your preference on how well you like your pork cooked.

While the pork loin filet is cooking make your pineapple salsa. In a bowl add the pineapple bits, red onion and cilantro. Slice both limes in half and squeeze juice into bowl. Stir until well blended. Cover and put in fridge until pork is ready.

Once pork loin filet is ready remove from pressure cooker and slice it into 1" to 2" slices.

To make sliders add a slice of lettuce on bottom bun. Next add a slice of pork and top with pineapple salsa. Add top bun to make a pork slider.
