One food that I don’t think I will ever outgrow eating is macaroni and cheese! I grew up eating the box stuff from the box but now prefer to make it homemade if I have the time! I LOVE making it from scratch because you can make it with your favorite cheese or even multiple cheeses if you want. Since I am a fan of food that is a little spicy I like to make my Easy Pepper Jack Mac and Cheese Recipe that is delicious, cheesy and not that complicated to make.
With just a handful of ingredients and a cast iron skillet you are in for a delicious side dish that will have you wanting seconds. You will need some elbow pasta, shredded cheese, milk, flour and some a little butter. You will of course need a stove an an oven to make your masterpiece.

Ingredients
- 2 cups elbow pasta
- 2 cups milk
- 2 cups shredded Pepper Jack cheese
- 2 tablespoons flour
- 2 tablespoons butter
- 1-2 peppers (optional)
Instructions
-
Cook elbow pasta according to package al dente, around 7-8 minutes. Remove from heat, drain and set aside.
-
Add the butter in an oven safe skillet and melt butter over medium heat. Add flour and stir constantly for about 30 seconds to allow butter to absorb into flour. Add the milk and stir constantly until the mixture slightly thickens. Remove skillet from heat and slowly add in 1 1/2 cups of the shredded Pepper Jack cheese, stirring it as you add it until all the cheese has been melted and the sauce becomes smooth.
-
Stir in cooked elbow pasta. Top with remaining Pepper Jack cheese. You can also slice a jalapeno or serrano and add it to the top too!
-
Place skillet in oven and bake at 350° for 20-25 minutes until cheese is slightly golden. Remove from oven and enjoy.
