Strawberry Icebox Cake With Lemon Recipe
An easy Strawberry Icebox Cake that can be made with only six ingredients and four steps.
Ingredients
- 8 low-fat graham cracker sheets
- 1 1/2 cups nonfat plain greek yogurt
- 1 lemon, zested and juiced
- 2 tsp Stevia
- 1 tsp vanilla extract
- 1 cup sliced strawberries
Instructions

Line a small dish with plastic wrap. Allow plastic wrap to overhang on the edge.

In a bowl, mix together yogurt, lemon zest, lemon juice, Stevia and vanilla extract.

Line bottom of pan with two graham cracker sheets. Spread 1/3 of yogurt mixture on top of graham crackers. Top with sliced strawberries and 2 graham crackers sheets. Repeat, layering twice. Top with remaining 2 graham cracker sheets.

Using plastic wrap overhang, wrap the cake and refrigerate for at least 2 hours. When ready to serve, Cut lengthwise into about five, one-inch slices.
