When it comes to baking, my family LOVES when I make something SWEET! Since I am one that enjoys finding and creating new recipes in the kitchen, I was excited to be invited to take part in the Truvia Lunch Makeover Challenge. With this challenge, I was to create one of their recipes that uses the Truvia® natural sweetener. Since I am one of the many moms worried about the excessive sugar in the foods my family eats, I was a little eager to see if my family would notice if I added a natural sweetener in one of my recipes.
So I baked up these yummy looking Fruity Thumbprint Cookies. Not only do my children think these are great, so does my husband. We had a friend over yesterday that complimented the cookies too! So with that said, I think I will be baking this fall and winter with more Truvia! Even though these cookies that I baked still had sugar, by using the natural sweetener, I was able to reduce the amount of regular cane sugar I would normally use in a cookie recipe.
Below is my version of the Fruity Thumbprint Cookies Recipe:
Ingredients:
- 1 cup butter, at room temperature
- 3 1/2 tablespoons Truvia™ natural sweetener
- 1/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 egg whites
- 1 cups finely chopped peanuts
- 1/2 cup Smucker’s Strawberry Preserves with Truvia™ or Blackberry Jam with Truvia™
Directions:
- HEAT oven to 350°F
- In a large mixing bowl, add all ingredients except 2 egg whites and chopped peanuts.
- Put egg whites in a bowl and chopped peanuts in a different bowl
- Roll dough into balls using about 1 TBS of dough if not a little more. Dip ball in egg, then in peanuts and place on cookie sheet.
- Using your thumb, make an indention in the balls of dough.
- Bake for 16 minutes on center rack.
- Remove from oven and place 1/2 TST of preserves into the indention of each cookie and return to oven for an additional 2 to 3 minutes or until lightly brown.
- Cool on baking sheet for around 10 minutes, then move to wire rack.
- Enjoy your cookies!
This was the first time I had ever made thumbprint cookies and they went FAST! I cannot wait to make these cookies with the Truvia® natural sweetener along with some of the other recipes too! Now I got to make more of these for my daughters’ lunches!
