I LOVE sugar cookies, especially when they are moist and SOFT. The sugar cookie is something that is easy to make and something you can always give a little pizzazz to.
Last week I was in the mood for sugar cookies. I got out my ingredients and thought I would give it a little spunk by adding some pineapple. These cookies came out DELICIOUS!

Ingredients
- 4 cups all purpose flour
- 2/3 cup shortening (butter flavored)
- 2/3 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 TSP vanilla extract
- 2 TSP baking powder
- 2 eggs
- 1 TSP salt
- 1/3 cup crushed pineapple
Instructions
- In a large mixing bowl, cream butter, shortening and the sugars. Stir in eggs, vanilla and pineapple.
- In a separate bowl, add remaining ingredients and add to wet mixture.
- Roll dough into 2″ balls and roll them in sugar. Place on baking sheet 2 inches apart.
- Bake cookies 10 to 12 minutes at 350 degrees. Remove when done and cool on wire rack.
- Enjoy

Oh yum! Soft cookies are my favorite, unless they’re gingersnaps! I’ve never had pineapple in cookies though. I bet it’s good. I recently had pineapple in chocolate and who would of thunk, it’s was addictive! THANKS!!!
