If you have been following along my blog, you probably know I am a big fan of Monsters University. In celebration of the movie finally hitting the theaters, I decided to make some fun Monsters University themed cupcakes for my kids… and maybe some for me too!
If you already know how to make cupcakes, then this should be very easy for you. This will also be a easy if you use cake mix from a box. For me, I made my cupcakes from scratch and here is the ingredients I used:
- 2 3/4 cup unbleached cake flour
- 1 2/3 cup sugar
- 1 TBS baking powder
- 1/4 cup coconut oil
- 12 TBS unsalted butter (softened)
- 1 egg
- 4 egg whites
- 1 cup milk
- 2 tsp vanilla extract
- 15-20 drops Neon Green Food Coloring
- 1 package Pillsbury Monsters University cookies (for topping)
- 1 tub white creamy frosting (for topping)
- Blue sprinkles (for topping)
Step One: First you will need to make your batter.Β
In a mixing bowl add the flour, sugar and baking powder and mix well to blend. Slowly add remaining ingredients (except those for the topping) and mix well. To make the cake batter more green, add more drops of food coloring. I used around 15 but should have made more because as it cooked, it actually looks a little yellow.
Step Two: Add the cupcake liners and batter to the muffin tin
To make the cupcakes good size, you will want to fill the liners about 3/4 full. DON’T fill the liners all the way or you might have a mess in the oven.
Step Three: Heat the oven to 350 degrees and bake cupcakes for 18-20 minutes.
I baked my cupcakes for 20 minutes but you will want to check on yours at around 18 minutes since oven vary. They are done when a toothpick comes out clean.
Step Four: Bake the Pillsbury Mike Wazowski themed cookies
While the cupcakes are cooling, bake the cookies per directions on package and then then allow them to cool.
Step Five: Frost the cupcakes
What I did was remove 1/2 the frosting from the container and added some neon green food coloring to give it colored. I then frosted some of the cupcakes with my new green frosting and the rest with the remaining white frosting.
Step Six: Decorate the cupcake Mike Wazowski style!
Now you just have to control yourself from eating more than one!
Sprinkle the top with some blue sprinkles and top with a Mike Wazowski cookie. You now have a totally CUTE cupcake that either you or your children are going to LOVE…
