On the weekends I am always trying to come up with new breakfast ideas that the family will enjoy. We have our favorites but there are times when I want to try something new. Since my whole family loves eggs, potatoes and cheese I decided to go with an oven baked Tortilla Española which is a Spanish style omelette.
This is something that is easy to make, full of protein and a great breakfast option that will get your day started off right.
How To Make An Oven Baked Tortilla Española
First cook about 1/4 pound of thin sliced salami in a skillet over medium-high heat until it begins to brown. Remove from skillet and set aside.
Next add 2 potatoes (cut in pieces), 1/4 cup chopped onion, a tablespoon of vegetable oil and a dash of salt and pepper. Cook in skillet for about 10 minutes until tender and golden brown.
Add the salami and about 1/4 cup of chopped parsley.
In a bowl whisk together 8 eggs and 1 cup shredded cheese. Pour into a cast iron skillet and stir to distribute the ingredients.
Put cast iron skillet into oven and bake at 400° for about 10 minutes until tortilla is puffed, brown around the edges. Use a knife to check to make sure the inside comes out clean when inserted in center.
Remove from oven and allow to cool. Slice a piece and enjoy!
