On the weekends I get the opportunity to make the whole family breakfast. During the week it can be hectic in the mornings and we don’t get to eat breakfast together. I was looking to make something different this past Sunday. I wanted to surprise the family with something that they had never tried before. That is where my Bacon Breakfast Quiche Cups came into play. Now this something that ALL of my children ate. My daughter Hannah even had 2 of them because she said they were so good! I had no leftovers so they must have been GOOD.
Below is my recipe if you want to try it out.

- 6 slices bacon – cooked and crumbled
- 1 package (8 oz) cream cheese
- 2 eggs
- 2 TBS milk
- 1 cup cheddar cheese
- 1 can Pillsbury® Grands! Flaky biscuits
- 1 TSP sea salt
- 1/4 TSP pepper
Instructions
- In a bowl stir the cream cheese until it has a soft creamy texture.
- Add milk, eggs, cheese, bacon, salt and pepper (be sure to save some bacon for your topping)
- Roll each of the 8 biscuits flat to form a 4-5 inch round
- Spray muffin tin with non-stick cooking spray and place each biscuit in muffin tin. Add a biscuit to muffin tins, pressing on the sides to create a cup for your cream cheese/egg mixture.
- Add the mixture to each of the cups you just made.
- Bake at 375 degrees for 20 minutes
- Remove from oven and add the remaining bacon to the top of your bacon cups.
- Remove cups from muffin tins and enjoy!
