In the past couple months, I don’t think I have turned my oven on even once. I like to bake, but during the summer when it is HOT, I hate using the oven. During the summer I find other ways to cook using the stove and BBQ grill to prepare our meals.
This month I was invited to participate in “The Tastes from Home with Frito-Lay Recipe Contest“. With this contest, I am to create a recipe that reminds me of home. For the last week I have been trying to rack my brain thinking of a recipe. Today I figured it out! When it comes to meals that my family likes, we can all agree on tacos. For most Tuesdays, we have Taco Tuesday night where I make tons of YUMMY tacos with all the fixings. I am one that likes variety, so I tend to change up the tacos each week so we don’t get tired of my tacos! Since our favorite food is tacos, it only makes sense to use a recipe for this contest that includes one of my taco creations.
Here is my latest Taco Tuesday recipe that I would like to call Spicy Pork Soft Taco Supreme.
Ingredients:
- 1 pound Pork loin – cut in small thin strips/pieces
- Chili sauce – about 1/2 cup
- Uncle Ben’s Instant Brown Rice
- 2 1/2cups water
- 1 1/2 cup rice
- 1 TSP butter
- 1 small can of diced tomatoes
- package of tortillas
- Sour cream
- 1 can refried beans
- Shredded Cheese – 1/2 cup
Directions:
- In a skillet, add 1/4 cup of chili sauce and added pieces of pork. Cook until done and set aside;
- In a pan add water, butter, rice, 1/4 cup chili sauce and can of tomatoes and heat until it boils. Reduce stove to medium high and cook for 10 minutes or until most of water is absorbed and rice is tender. Drain excess water.
- Grab a tortilla, add some of the rice mixture, beans and cooked pork pieces.
- Top with shredded cheese and sour cream.
- Enjoy
My family likes our meals a little spicy sometimes, especially our tacos. This recipe not only gives taco a little spice, they also give those who are used to eating beef tacos a little twist on their meal!
